Kesar Pista Ice-Cream

Kesar Pista Ice-Cream with a touch of elaichi in it is a home made ice cream. Very easy to make at home and loved by kids. I have tried myself and now ask you people to try at home and do let me know how you liked it


Ingredients:

  • Milk (100% Fat) - 2 cups 
  • Milk Powder - 1 cup 
  • Castor Sugar - ½ cup 
  • Corn Flour - 1 tbsp 
  • Saffron Strands (Kesar) - 2-3 tsp
  • Cardamom Powder (elaichi) - 2 tsp 
  • Fresh Cream - ½ cup 
  • Chopped Pista - 1/2 cup

Method:
  • In a mixing bowl mix well 1 cup milk, milk powder & cornflour and keep aside
  • Heat a saucepan on gas, add sugar, saffron, cardamom powder and another cup milk and mix well then
  • Then add milk mixture prepared earlier in this and stir well until the mixture gets thickened
  • Add fresh cream and chopped pista in it and keep stirring until the thick mixture is ready
  • Once done pour the mixture in serving bowl and refrigerate for 3-4 hours
  • Then scoop out chilled kear pista ice cream in ice cream bowl and serve to your families

Chocolate Ice cream

Chocolate Ice-cream is a favourite dessert of people of all ages so guys enjoy delicious chocolate ice-cream after main meal on Sunday

Ingredients:

  • Unsweetened Chocolate - 100 gm
  • Milk - 1¼ cup 
  • Eggs - 2 (Beaten Properly)
  • Castor Sugar - 1 cup 
  • Cream - 1 cup 
  • Salt to taste
  • Vanilla - 1 tsp
  • Milk - ½ cup 

Method:
  • In a heated pan add chocolate and as the chocolate melts add milk
  • Keep stirring so that the chocolate don't form clumps then it would be tough to break them
  • In that chocolate milk add beaten eggs, sugar, cream, salt, vanilla and mix well to form a thick mixture
  • Once the mixture is ready pour them in the ice-cream maker to give proper shape and then refrigerate for 3-4 hrs
  • You can also serve chilled with chocolate sauce from top

Delicious Egg-less Chocolate Cake

This delicious egg-less chocolate cake is for all those who can't have eggs in their food or don't like eggs so here comes egg-less chocolate cake for all those people


Ingredients:
  • Refine Flour - 2 cups
  • Baking Powder - 2 tsp
  • Soda Bi-Carb - 1 tsp
  • Castor Sugar - 1/2 cup
  • Condensed Milk - 1/2 tin
  • Milk - 1/2 cup
  • White Butter - 1 cup
  • Choco Powder - 1/2 cup
  • Chopped Walnuts/Almonds - 1 cup
Method:

  • Mix flour, soda bicarb & baking powder together
  • Add sugar, condensed milk, milk, choco powder & melted butter in the flour and mix well to form a thick batter
  • Preheat the oven at 200'c and grease a baking tray with butter and pour the chocolate cake batter in the baking tray
  • Bake at 200'C for 30min or until the cake turns soft
  • Insert a fork or needle and check whether the cake is properly cooked or not
  • Once done remove from oven let cool down in room temperature and then put in freezer for couple of hours
  • Serve cold to everyone

Grilled Prawn with grapes & Honey Sauce

Grilled Prawn with grapes & Honey Sauce is a delicious starter and I myself tried it home, its really awesome and as I'll prepared today for all of you I am sure even you all will love it, so do try at home and let me know your comments 


Ingredients:
  • Prawns: 500 gms
  • Black grapes: 15
  • Red grapes: 15
  • Green grapes: 15
  • Vinegar: 1/2 cup
  • Red chilli flakes: 3 tsp
  • Honey: 1 cup
  • Oil to grease: 4 tbsp
  • Salt to taste

Method:

Remove shells, wash & clean the prawns

Skew the prawns alongwith grapes in the skewer in the way like firstly a black grape
then a prawn again a red grape and finally a green grape

Place all the prawns and grapes in this order in the skewer and then brush oil & salt on them and place in the grill

Turn the skewers so that both sides get cooked

For the sauce heat honey in a pan, add salt, vinegar, red chillies and mix well and keep aside

Now when the prawns are grilled place them on the serving dish and pour the honey sauce on top

Finally serve hot your Grilled Prawn with Grapes & Honey Sauce

Stuffed Capsicum

Stuffed Capsicum is a baked starter dish prepared with capsicum as the main ingredient and paneer or cottage cheese with potatoes for the stuffing inside the capsicums. This can be prepared with any coloured capsicums


Ingredients:
Capsicum: 10
Oil: 5 tbsp
Salt: to taste
Chopped Ginger: 2 inch piece
Chopped Garlic: 4 clove
Chopped Green chillies: 5
Chopped Onions: 2
Chopped Carrot: 2
Red chilli powder: 1 1/2 tsp
Chopped Cashewnuts: 8
Grated Boiled Potatoes: 2
Grated Cottage cheese: 500 gm
Chaat masala: 2 tsp
Chopped Raisins: 1 tbsp

                              
Method:

Cut the top of the capsicums & scoop out all the seeds from inside
Rub oil and salt inside & outside of the capsicums & set aside for 15min
Heat oil in a pan, add onion, ginger, garic, green chillies and mix them together well
Add grated carrots, chilli powder, grated potato & cheese and mix well with rest of the spices
Preheat oven at 180'C and put this potato cheese stuffing in each capsicum and place them on a greased baking tray and bake for 15 - 20 min
Once the capsicums are done serve hot with salad & ketchup

Delicious Curd Rice

Curd Rice is a important rice preparation of southern cuisine and most popular in Karnataka. It is highly flavoured and delicious to have in your meals


Ingredients needed:

  • Rice - 2 cups
  • Yogurt - 1 1/2 cups
  • Milk - 1 cup
  • Mustard seeds - 2 teaspoon
  • Asafoetida - 1/2 teaspoon
  • Dried red chillis - 2
  • Curry leaves - 10-15
  • Chopped Ginger - 2 inch piece
  • Chopped Green chillies - 6
  • Whipped cream - 1/2 cup
  • Grated Cucumber (squeeze out excess water) - 2 medium
  • Grated Carrot - 2 medium
  • Salt to taste
  • Oil - 3 tablespoons

Method:
  • Boil water in a handi or deep container and cook the rice and remember the rice should be little over cooked and when done drain excess water & keep aside
  • Heat oil in a pan and add mustard seeds, asafoetida, dry red chillies and mix well
  • Then add curry leaves, chopped ginger and green chillies and pre prepared rice in it
  • Mix all the ingredients well with rice then add salt, yougurt, milk & fresh cream to form a gravy type but not fully gravy
  • When all ingredients mixed well with the rice cool at room temperature and then put in freezer to chill it
  • Serve your curd rice cold with grated cucumber & carrot

Egg Bhurji In Punjabi Style


Egg Bhurji is nothing but scrambled egg which is a common as well as easy dish to be prepared in a short span of time and today I am going to prepare for you Egg Bhurji in Punjabi Style, so try it at home


Ingredients:
  • Eggs - 15
  • Oil - 6 tablespoons
  • Chopped Onions - 6 medium
  • Chopped Tomatoes - 6 medium
  • Chopped Ginger - 2 inch piece
  • Chopped Green chillies - 6
  • Salt to taste
  • Chopped coriander leaves for garnishing

Method:
  • Heat oil in a pan and add chopped onions
  • Once the onions get brownish add chopped tomatoes, ginger, garlic, green chillies and mix well
  • On the other end break the eggs in a bowl, add salt and beat well to form a liquid one and mix with the spices in the pan
  • Stir well until the egg mix becomes totally dry to form a bhurji
  • Now garnish with coriander leaves and serve hot with paratha, nun or chapati


Egg in Coconut Gravy

As the name suggests Egg in Coconut Gravy is a southern cuisine mostly Kerala based and like other egg curry nothing new easy to prepare just the main gravy is made out of coconut and its very thick yet spicy one. You can serve with fine grained rice


Ingredients as follows:
  • Coconut milk - 1 cup
  • Boiled Eggs - 10
  • Oil - 3 tbsp
  • ChoppedOnions - 5 medium
  • Curry leaves - 15
  • Turmeric powder - 1 tsp
  • Coriander powder - 2 tsp
  • Red chilli powder - 2 tsp
  • Ginger-garlic paste - 2 tbsp
  • Tamarind pulp - 2 tbsp
  • Salt to taste
  • Fresh coriander leaves for garnishing

Method of Preparation:
  • Heat oil in a pan and add chopped onions
  • Once the onions turn brownish add curry leaves, turmeric powder, red chilli powder, coriander powder, ginger garlic paste and 1/2cup water to form the gravy
  • For the tamarind pulp keep the tamarinds in hot water for 10-15 min and then extract the pulp
  • Now add this pulp in the gravy and blend the whole prepared gravy till now in a blender to make a smooth one
  • After blending pour in a pan and again heat it on flame, when heated add coconut milk and salt
  • Now vertically cut the eggs in two halves and place on the serving dish and pour the cocnut gravy on the eggs
  • Serve hot garnished with coriander leaves

Chicken Garnished With Apricot


Apricot is a fruit which mostly looks like peach but very sweet and tasty and today I am going to prepare my chicken dish which has the taste of apricot in the gravy as well as garnished with apricot, so presenting to you all my Chicken Garnished With Apricot



Ingredients Required:

  • Dried apricots - 2 cups
  • Boneless chicken - 1 Kg
  • Butter - 8 tbsp
  • Thin strips of Green Capsicum - 5 medium
  • Salt to taste
  • Whole Almonds - 20
  • Brown sugar - 1 cup
  • Port wine - 5 tbsp
  • Black Pepper Powder - 2-3tsp

Method of Preparation:
  • Soak dry apricots in hot water for twenty minutes and take half them to blend into a puree and rest for garnishing
  • Now heat 2tbsp butter in a pan, add capsicum strips, salt, half of the almonds and mix well and spread on serving plate
  • Now heat rest of the butter, add brown sugar, chicken pieces, wine, black pepper, apricot puree and mix well
  • Add little water for the gravy and cover with a lid so that chicken get cooked
  • Remove lid and if chicken is cooked pour it on the capsicum almond layer in serving plate and garnish from top with rest almonds & dry apricots
  • Here is your Chicken Garnished With Apricot ready to serve hot

Delicious Chicken With Walnut

I don't think there would be any person who don't like chicken if he/she is non vegetarian and if its a boneless chicken dish. So ladies & gentlemen presenting to you all a very delicious chicken dish from my kitchen to yours namely Delicious Chicken With Walnut You can also go through my Glossary Index if you can't understand any measurement or ingredients 


Ingredients are as follows:-
  • Boneless Chicken Pieces (Approx 1" each) - 1 Kg
  • Walnuts (Peeled off & blend into powder) - 1 Cup
  • Chopped Onion - 3
  • Ginger Paste - 2 tbsp
  • Garlic Paste - 2 tbsp
  • Cumin Powder - 2 tsp
  • Coriander Powder - 2 tsp
  • Tomatoes (blend to form puree) - 2 Large
  • Chopped green chillies - 5
  • Whipped Cream - 5 tbsp
  • Yoghurt - 1 Cup
  • Garam Masala Powder - 2 tsp
  • Salt to taste
  • Oil - 2 tbsp


Method follows as below:-
  • In a mixing bowl marinate chicken with ginger paste, garlic paste, salt, 1tsp cumin powder, yoghurt and keep aside for half an hour
  • Now heat oil in a pan & add chopped onions in it
  • Once the onions turn brownish add tomato puree, green chillies, coriander powder, cumin powder, yoghurt, salt & marinated chicken and mix well. Cover with a lid so that chicken gets cooked
  • After 15min remove lid and if chicken is cooked add walnuts powder, garam masala, whipped cream and mix well to prepare the thick gravy
  • Now your Delicious Chicken With Walnut is ready to be served hot

Spicy Mutton Kasha

Mutton is one of the most favourite dish in all bengali families worldwide, even we say whatever we have through out the week doesn't matter but its mandatory to have mutton on Sundays, So I am sharing my one favourite mutton dish with you all to make your Sunday a special one. Presenting to you all Spicy Mutton Kasha

Ingredients for the Kasha:
  • Mango Pulp (Ripe One) - 2 Cups
  • Mutton (Approx. 2inch each piece) - 1Kg
  • Chopped Onion - 3 Big
  • Chopped Almonds - 20
  • Raisins - 20
  • Melon Seeds - 4 tbsp
  • Garlic Paste - 2 tbsp
  • Ginger Paste - 2 tbsp
  • Turmeric Powder - 1 tsp
  • Red Chilli Powder - 2 tsp
  • Garam Masala Powder - 2 tsp
  • Green Chillies - 6
  • Yoghurt - 1 Cup
  • Saffron - as per your requirement
  • Salt to taste
  • Oil - 5 tbsp


Method of Preparing the Kasha:
  • Blend almonds & melon seeds with water in a blender to form a thick paste
  • Heat Oil in a pan
  • Add chopped onion and mix well
  • When onions turn brownish add ginger paste, garlic paste, turmeric powder, red chilli powder, green chillies along with the mutton pieces & mango pulp and mix well with spices
  • Now add 1 Cup water and cover with a lid so that mutton gets cooked for approx half an hour
  • After half an hour remove the lid and if the mutton is cooked add salt, garam masala powder, raisins, saffron and mix with the mutton well
  • Now garnish with coriander leaves and your Spicy Mutton Kasha is ready to be served  


Khatta Meetha Aam Ka Sharbat

Since the summer days are back in town so I'll post some beverages for you all which you all would love to have during this point of time, and one such is The Khatta Meetha Aam Ka Sharbat. A very easy recipe which can be performed even by kids back home


Ingredients:
  • Raw Mango - 2 Kg
  • Sugar Powder - 2 Cups
  • Fresh Mint Leaves - 10 - 12
  • Roasted Cumin Powder - 4tsp
  • Lemon (cut into round slices) - 4
  • Black Pepper - 2tsp
  • Salt to taste
  • Rock Salt to taste

Method:
  • Boil and then peel off the mangoes to extract there pulp
  • Keep few mint leaves for garnishing and then grind the rest into powder
  • Add sugar powder, mint powder, cumin powder, black, pepper, rock salt, normal salt with the extracted mango pulp and mix well to form the shake
  • Pour this sharbat in serving glasses and store in freeze for a while because this is served chill
  • Once the sharbats are chilled serve with garnished mint leaves & lemon slices
  • Thats all and your Khatta Meetha Aam Ka Sharbat is ready

Crispy Baby Corn Fingers

Baby Corn fingers is a very crispy starter served with sauce which is very delicious and loved by people of all ages

Ingredients as a Whole:

Baby Corns - 30
Ginger Paste - 3tsp
Garlic Paste - 3tsp
Red Chilli Powder - 1tsp
Salt to taste
Chat Masala to taste
Oil for Frying


Ingredients for Batter:

Flour - 4tbsp
Cornflour - 4tbsp
Chopped Parsley - 2tsp
Red Chilli Powder - 1tsp
Salt to Taste

Ingredients for Tango Chutney:

Oil - 2 tbsp
Chopped Garlic - 15
Tomato puree - 12 tbsp
Tomato ketchup - 4 tbsp
Vinegar - 2 tsp
Red chilli powder - 2 tsp
Salt to taste



Method For Crispy Baby Corn Fingers:

Marinate baby corns with ginger paste, garlic paste, chilli powder, salt & chaat masala and keep aside for half an hour
Now for the batter mix flour, cornflour, parsley, chilli powder and salt with sufficient water to form a thick batter for the snacks
Then for the sauce heat oil in a pan add garlic, when garlic turns little brownish add tomato puree, tomato ketchup, vinegar, red chilli powder, salt and mix well to form the sauce. Once the sauce is ready keep aside
Now dip the marinated baby corns in the batter and deep fry in oil
Serve Hot Crispy Baby Corn Fingers with the Tango Chutney

Spring Rolls Wrapped In Dark Chocolate

Spring Rolls are prepared with many bases like coconut, banana or if it is a snack then made of chicken stuffing but today I'll show you spring roll wrapped in dark chocolate with vanilla ice-cream. For the measurements & details about ingredients visit  my Glossary Index



Ingredients for Preparing Spring Rolls Wrapped In Chocolate:
  • Grated Dark Chocolate - 2 Cups
  • Spring Roll Wrappers - 10
  • Chopped Almonds  - 20
  • Cornflour - 2 tbsp
  • Vanilla Essence - 10 Scoops
  • Honey - 8 tsp
  • Oil for frying

Method for Preparing Spring Rolls Wrapped In Chocolate:
  • Cut the spring roll wrappers into two pieces from between 
  • Roast the chopped almonds in a dry pan and keep aside
  • Mix little water with cornflour to form a thick paste
  • Take each wrapper, add spoonful grated chocolate inside and wrap properly ans seal the two ends with corflour paste then fry the rolls in heated oil
  • Now divide the vanilla ice-cream in 10 bowls, add 1tsp honey in each, sprinkle some roasted almonds & finally place a fried spring roll in each bowl
  • Finally your Delicious Spring Rolls Wrapped In Dark Chocolate is ready to be served

Ingredients Needed For Apple Muffins:-
  • Finely Chopped Apples - 4
  • Flour - 2 Cups
  • Baking Powder - 1tsp
  • White Butter - 1 3/4 Cup
  • Sugar (Powdered) - 2 Cups
  • Cinnamon Powder - 2tsp
  • Vanilla Essence - 1tsp
  • Milk - 5tbsp
  • Chopped Walnuts - 1 Cup


Method Of Baking Apple Muffins:-
  • Preheat Oven at 200'C
  • Mix Flour and baking powder together & keep aside
  • Mix butter & sugar together in a mixing bowl well to form a creamy texture
  • Add finely chopped apples, cinnamon powder, vanilla, walnuts in the butter and gain mix well
  • Now add the flour in it and the milk and keep stirring with a wooden spatula to form the batter 
  • Then grease the moulds with batter and pour 2-3tbsp of batter in each moulds and bake at 200'C for 20-25min
  • Insert a tooth pick or fork and you can understand its done or not and remove from the oven
  • Serve warm but not hot one

Baked Banana Muffins With Chopped Walnuts

We all know that banana is loved by kids and if it is combined with walnuts to form muffins I am sure your kids would never say a no to it

Ingredients Required For Preparing Muffins:
  • Mashed Banana - 3/4 Cup
  • Chopped Walnuts - 7tsp
  • Flour - 14tbsp
  • Baking Powder - 2tsp
  • Sugar (Powdered) - 3/4 Cup
  • Rolled Oats - 7tbsp
  • Vanilla Essence - 1tsp
  • White Butter - 3/4 Cup

Method Of Preparing Muffins:
  • Mix flour & baking powder and keep aside
  • In a mixing bowl mix butter, sugar and mix well with a wooden spatula to form a creamy paste
  • Then add butter, vanilla, mashed bananas, chopped walnuts & flour mix and beaten well to form the base for the muffins
  • Now grease the muffins moulds with little butter and pour the mixture in each of them
  • Preheat oven at 150'C and then put the moulds in oven and bake for 20-25 min
  • Insert a fork and if the muffins leave the moulds its done, remove from oven and let cool a bit in room temperature
  • Serve with hot tea or coffee

Rice With Lemon

Lemon rice is mainly south based rice preparation. It can be presented both with veg & non veg items totally as per your choice.

Ingredients Needed:-
Preparation Method:-
  • heat oil in a pan
  • add bay leaves, mustard seeds, urad dal, curry leaves & green chillies.
  • when oil starts coming out add chopped onions & turmeric powder
  • as the onion gets a bit brownish add the boiled rice along with salt as per your taste.
  • finally serve hot with lemon juice and coriander leaves.




Baked Beans In Pasta Soup

A very yummy soup made out of pasta and baked beans as the base accompanied by onion, tomato, whipped cream, and cheese garnishing. It is enough heavy to be served as the main course meal, so just hope you all will like it 


Ingredients for Baked Beans In Pasta Soup:-
  • baked beans - 1 Cup
  • chopped onions - 2 Medium Sized
  • chopped garlic - 1 1/2tbsp 
  • chopped tomatoes - 1 - 2
  • macaroni or any pasta - 1 Cup
  • cornflour - 2 tsp 
  • dried oregano (optional) - 1 tsp 
  • whipped cream - 2 tbsp 
  • tomato ketchup - 3 tbsp 
  • butter - 2 tbsp 
  • salt to taste
  • grated cheese (for decoration) - 4 tbsp 

Method For Preparing Baked Beans In Pasta Soup:-
  • Firstly heat butter in a pan, add chopped onions, garlic, tomatoes & mix well until onions get brownish
  • Then add baked beans, pasta & 3-4cups hot water and cover with a lid so that pasta gets cooked
  • After approx 10min remove the lid and add cornflour(mixed with water) in it
  • Once the pasta is cooked add oregano, ketchup, cream and stir well to form the thick soup
  • Before serving add grated cheese from top for decoration
  • Now Your Baked Beans In Pasta Soup is ready to be served
